This weekend was a big fat BUST in the budget and weight loss-wise.
It just seems like when I go weeks and weeks doing really well, sticking to the budget and sticking to my "diet," I feel like I need to have one week where I just let go and do whatever I want to.
Last weekend Philip and I went out Friday night. We had a crappy week with his job, and decided to go out and forget about it a while. We had dinner at Deep Fork. It was fantastic, the atmosphere, the drinks, the service, the food.... wonderful. I had the most AMAZING tomato mozzarella salad and then salmon with sweet potato fries. We topped it off with dessert at Orange Leaf. The entire was so much fun, but we also completely blew the budget and the diet.
The next day we got up, had an awful (but so...SO good) breakfast. And decided to go shopping crazy.
People.
I have not shopped like this in a long time (not with my own money anyway). We spent about 5 months worth of clothing allowance in one afternoon. I decided to screw WW for the rest of the day too and ate at Orange Leaf again.
Needless to say, I did not weigh in at WW tonight. My leader knew right away. I said, "I don't want to weigh in today." She said, "Oh, sounds good. Was it fun?" Haha. Yes. Yes it was.
And here is the difference between old me and new me. Old me would continue to eat like that and spend like that until it was out of control again. Old me would have run out of cash for the shopping trip and used the credit card keep shopping, promising myself to pay if off when we got home. Nope, we cash flowed the whole thing, and while it slightly slows our saving down... it's definitely not going to hurt us. I think you realize it's a life change when you fall off the wagon, but decide to immediately hop back on. It was fun as a "treat," but I could never live every day of my life like that. I have too many goals.
It was an amazing weekend though.
Oh, and I bought my first "single digit" sized jeans from American Eagle in 2 years. It was so nice to have to ask the attendant for a SMALLER size. That's about all the motivation I need to keep this thing going.
At next week's WI, I'm hoping to be down 2.8lbs, for a total of 40 pounds gone!

Why do bad things happen to good people?
Why would a God, who is all loving, allow bad things to happen to good people? If we are his children, why does he allow horrible, awful, tragic things to come into our lives? This is something I've always struggled with.. especially after my uncle Deano died. He died in 2006 (at 37), suddenly of a heartattack. He left behind a wife of 17 years, a 10 year old daughter, and an 8 year old son. I was so angry at God. WHY!!? Why would you rip this person from our lives so suddenly? I was so angry at God. I still miss Deano so much and think about him so often. He spoke so much wisdom in my life, I wish he were still here to help me and make me laugh. I wrote this letter to him, just a day or so after he died.

such amazing kids and I promise to be an example (like you were to me) to them.
You were only 37. Why did God take you now?
It's hard to understand why, but we have to remember everything is a part of his will.

Praise Jesus that God is gracious. Thankfully we have an "unfair" God who allows us to be saved, in grace, by Jesus! The things of this earth are only temporary, He is forever.
The question really is, "Why do GOOD things happen to (us) BAD people." Thank you Jesus.

FREEDOM!
We completed Baby Step #3!
and we did it in less time than we thought we would!
It was tough work, we have to say "NO!" to ourselves a LOT. Especially me. We have to budget every dollar, every month. But, it's worth it to be debt free and have our emergency fund in place.
Now, on to Baby Step #3b..... saving for a new house down payment. I'm sure there will be another refrigerator chart coming soon :P

Weekly Weigh In!
Yesterday was the final day for the 10 in 10 challenge. I was 0.2 pounds away from reaching my goal. I weighed in last night and....
down 2.4 this week!
THOSE are the kind of numbers I want to see on the scale. When you bust your butt all week, it feels so good to see some results.
I really think "The Wendie Plan" is what saved me. I've been doing it the past 2 weeks, and I lost 1.4 and 2.4 each week I've done it. Before The Wendie Plan I was stuck in the curse of the "0-point-somethings."
Week 2 of the C25K challenge! Week 2 is not easy! I thought it would be.... I guess last week was pretty easy for me because I was already in decent shape when I started. Week 2 caught up with me for sure. I felt like passing out a few times, but I pushed through and finished! I'm planning to do a 5K in late May/early June. Anyone know of any?
I made the most amazing dinner Monday night:
Baked Macaroni and Cheese
13.25 oz Whole Wheat Pasta (I used Healthy Harvest Penne)
1 can Campbell's Cheddar Cheese Soup
1/2c. skim milk
8oz 2% shredded colby jack cheese
6oz parmesan cheese (grated)
1/2 panko bread crumbs
1/2 tbsp garlic powder
1 1/2 tsp black pepper
Cook pasta then drain. Add soup, milk, colby jack cheese, garlic powder and pepper. Mix together. Pour into 9x13. Top with panko crumbs and parmesan. (If you want it to be 6 pts instead of 8, leave off the parmesan cheese) Bake at 375 for 25-30 minutes.
8 servings/8 points
Philip and I LOVED this recipe. Some people add bacon bits or tuna to give it a different flavor (obviously that would use be additional points).

Here is a yummy recipe I made last night:
Caramel Apple Salad - 1c=2pts
3 Apples (cut into bite size pieces)
1 package of sugar free butterscotch pudding (just the powder)
1 can pineapple chunks (don't drain)
8 oz fat free cool whip
Mix it all together. It's such a yummy dessert, and counts as a fruit serving!
In Cooper news- my poor baby is still not feeling well. We think it's just allergies and/or a cold. I called the nurse, and she said there wasn't much she could do for him. We've been trying to keep his nose clean, propped his mattress up and keep the humidifier on at night. I wish this weather would make up its effing mind and quit messing with my kid!

My BFF Trisha came over last night for dinner. I had about 20 minutes to figure out something yummy and healthy to feed us all for dinner. I decided on Taco Soup and Cornbread!
Taco Soup
1 can black beans
1 can pinto beans
2 cans corn
1 can diced tomatoes
1 can green chilies
1 packet taco seasoning
1 packet ranch
Dumped it all together and cooked it on the stove for 30 minutes.
1 cup = 2 points
Cornbread
1 cup(s) uncooked cornmeal, yellow I used Jiffy
1 cup(s) all-purpose flour
2 tsp baking powder
3/4 tsp table salt
1/2 tsp baking soda
14 3/4 oz cream-style corn, canned
1/2 cup(s) buttermilk I just used water
2 large egg white(s)
2 tsp corn oil
400 degrees in an 8X8 for 20 minutes. Let it cool for 10. I also spray some "I Can't Believe It's Not Butter" on top.
8 servings, 3 points/serving
Seriously, Philip and Trisha (and I, of course) LOVED it. The cornbread is BOMB. It's so quick and easy to make, and makes for some yummy leftovers.
The best part is the entire meal only cost me $1.17. I had everything to make this, except 2 ingredients.
When Trisha got to my house, she gasped, "LOOK AT YOU! You look great! How much weight have you lost?! You look so skinny!" I haven't seen her in about a month, and since then I've only lost 3 pounds. I guess working out really is making a difference. Her comment definitely boosted the confidence level. :)

C25k
I wanted to mix up my exercise a little this week. I always do Boot Camp twice a week and Elliptical twice a week. I got a wild hair on Saturday to go for a jog around my neighborhood. It was really nice out this weekend. I decided to do the first step in the Couch-to-5K running plan. Alternating 60 seconds of running with 90 seconds of walking for 20 minutes (I did about 2 miles, which was a little less than 20 minutes). I REALLY enjoyed it! I had my iPod, listening to music, nothing to worry or think about except running, no distractions, no child pulling on my pants, no husband waiting for dinner, no laundry to be done... just me. Running.
I liked it so much I did it again Sunday.
I sweat a TON doing it and my heart rate stays up the whole time, so I know I'm working out hard. Every one I know who runs says it melts the weight off like nothing else. So, I think I'm going to find a place for jogging in my workout week. Who knows, in a few weeks I might be running solid for those 2 miles!
Since Philip is working days for the next 2 months, I decided to make us dinner like normal people on Saturday night. I found a recipe for this yummy looking Veggie Casserole with 'breadcrumbs' on top. I've been wanting to make it for a while.
Well let me tell you. It was nasty! Normally Philip will choke down just about anything I make (mainly because I think he doesn't want me to feel bad) well, he couldn't even eat this. I thought it was sick too. It must have been the comination of too much onion powder (I followed the recipe!), honey nut fiber one cereal, and nasty chicken broth (I just can't eat that anymore, the smell ruins it for me)..... so we threw out this big 9x13 pan of food and ate frozen dinners. Boo. Big fat fail.
At least Philip was home for dinner though. :)

Since Philip is working days for the next 2 months, I decided to make us dinner like normal people on Saturday night. I found a recipe for this yummy looking Veggie Casserole with 'breadcrumbs' on top. I've been wanting to make it for a while.
Well let me tell you. It was nasty! Normally Philip will choke down just about anything I make (mainly because I think he doesn't want me to feel bad) well, he couldn't even eat this. I thought it was sick too. It must have been the comination of too much onion powder (I followed the recipe!), honey nut fiber one cereal, and nasty chicken broth (I just can't eat that anymore, the smell ruins it for me)..... so we threw out this big 9x13 pan of food and ate frozen dinners. Boo. Big fat fail.
At least Philip was home for dinner though. :)
